4. Lightly cover the glass container with a plastic wrap (not airtight).
5. Store it in a dark location for 3 days to ferment. Make sure to open and stir the mixture once a day. If you’re starting to see some tiny bubbles, then it’s a sign that the mixture is beginning to ferment.
6. After 3 days, transfer the fermented mixture into a blender, then add white vinegar. Blend until the mixture becomes a very smooth purée.
7. Strain the mixture into a saucepan. Squeeze the solid parts with a spoon to extract the liquid faster. Do this until there’s no liquid coming out from the strainer.
8. Boil the liquid extract in medium-high heat for 5-10 minutes or until slightly thickened.
9. After the extract has been cooled completely, transfer it into a glass bottle.
