Ingredients
2 – 3 medium zucchini, grated
2 large eggs
⅓ cup almond flour
⅓ cup parmesan cheese, grated
¼ cup extra virgin olive oil
¼ tsp black pepper
1 tsp sea salt
Directions
- Use your hands or tea towel to squeeze out the water thoroughly from the zucchini. Mix the zucchini together with the other ingredients (except for the olive oil) in a medium mixing boil.
- Heat the olive oil over medium high heat in a large non-stick skillet. ⠀Make 8 patties out of the zucchini mixture. Fry 2-3 minutes each side until crisp and golden. Serve.
- You may store the remaining fritters in the fridge for up to 5 days. Make sure to use an airtight container to avoid spoilage. For reheating, you can either refry the patties for 1-2 minutes each side or place them in a toaster oven for 5-6 minutes.
