These tasty fritters are ideal for those keto dieters who are restricting their carb intake and are best served as keto appetizer or side dish.

Ingredients

  • 2 – 3 medium zucchini, grated

  • 2 large eggs

  • ⅓ cup almond flour

  • ⅓ cup parmesan cheese, grated

  • ¼ cup extra virgin olive oil

  • ¼ tsp black pepper

  • 1 tsp sea salt

Directions

  • Use your hands or tea towel to squeeze out the water thoroughly from the zucchini. Mix the zucchini together with the other ingredients (except for the olive oil) in a medium mixing boil.
  • Heat the olive oil over medium high heat in a large non-stick skillet. ⠀Make 8 patties out of the zucchini mixture. Fry 2-3 minutes each side until crisp and golden. Serve.
  • You may store the remaining fritters in the fridge for up to 5 days. Make sure to use an airtight container to avoid spoilage. For reheating, you can either refry the patties for 1-2 minutes each side or place them in a toaster oven for 5-6 minutes.
