This one delightful creamy keto soup is so easy and full of flavor – bursting with hearty sausage, creamy flavor, garlic, and roasted red peppers in a smooth creamy soup!
Ingredients
1 lb breakfast sausage
8 oz cream cheese
1 cup heavy cream
3 cups beef stock
2 stalks celery, diced
¼ cup garlic, diced
1 onion, diced
1 cup spinach or arugula
1 cup roasted red peppers cut into 1″ bites
Directions
- Brown the sausage in a huge stock pot on medium high heat for 5 minutes. Break them up into crumbles while cooking.
- Remove the sausage (but do not drain the grease) and set it aside.
- Combine celery and onions to the stock pot and cook until light brown for about 6 minutes.
- Mix in the garlic and cook to fragrant and softened, mixing occasionally for about 5 minutes.
- Mix the sausage back with the vegetables, then add cream cheese and roasted red peppers. Stir until the cheese is melted with the vegetables and meat.
- Mix thoroughly and slowly, then add in the beef stock, still stirring as you add. Set to a rapid boil.
- Turn off the heat and slowly add cream, whisking as you mix into soup. Turn back heat when the cream has been fully whisked into the soup.
- Lightly boil the soup to slightly thicken the soup. Mix the spinach and let it wilt. Once the soup has thickened and the spinach has wilted, turn off the heat and serve immediately.
